If Aerodactyl VSTAR gets devolved into Aerodactyl V (through Devolution Spray Z, for instance), does that count as it “leaving play”? Would that devolution remove the ability?

This card is probably going to have dozens of idiosyncratic interactions with cards outside of the format it was printed for. I suspect a lot of them will go unanswered but devolution is a thing in the current format (with at least Golurk V and a Porygon-Z from this very set capable of inflicting it), so I guess we will get an answer on at least this question, maybe a few others.
My guess is it retains the ability, because it’s still “this Pokémon,” but I have zero conviction in the answer.

I hope it retains the ability. I want to be able to devolve my own Aero VSTAR back into a Basic to that it can get “Metal Lodging” protection from Hisuian Goodra :3 :3

I would personally guess it would lose the ability, since evolving and devolving generally clears any effects in general, and even if you interpret the ability as being printed on the card after using Ancient Star, devolving would no longer even *be* that card.
The wording of the ability also implies it’s meant to be limited specifically to Aerodactyl VSTAR anyway. It would create a potentially very odd situation where the ability could be disabled by an opponent’s Aerodactyl VSTAR, simply because you devolved.
