Is anyone as confused as me as to why Ariados and Spinarak are both Dark Type in this Set?

As Peonat (kind of) said, with the Sword & Shield series, they shifted around what video game types make up the TCG types. Fairy is no longer its own type, but part of the Psychic type, and the Poison type is now part of the Darkness type, instead of the Psychic type. This is not the first time such a shift has occurred; for example, Poison types were originally part of the TCG Grass type.

When looking at the types and how they interact, I came to the conclusion that we want as few video game Types in a TCG type as possible, to make things simpler. Of course, giving each video game type its own TCG type would probably make things anything but simple, so if we can’t have a 1:1 relationship for a video game to TCG type, 2:1 is where the line needs to be drawn. Poison and Dark match up well together. I was sad they didn’t shift Rock to Metal and put Fairy with Psychic instead of with Dragon.

As far as I know, all of Poison-type Pokemon in the main games will go into Dark-type in TCG, making way for Fairy-type to become Psychic-type from now on.
