“The defending pokemon” simply refers to your opponent’s active pokemon.
The “each” in “each defending pokemon” only applies in double battles (or hypothetical formats that require players to face multiple opponents at once), in which the opponent (or opponents) can deploy two active pokemon at once.
For all intents and purposes, in regular battles, this simply means “discard an energy card from your opponent’s active pokemon.”

Similar effect to Dark Feraligatr‘s “Crushing Blow.” I think this was the second energy-discarding “Crush” attack in the TCG.

Does this gyarados mean “flip a coin, if heads this attack does 10 damage and you may discard an energy attached to the defending pokemon” or does it mean “flip a coin, if heads, this attack does 10 damage. Discard an energy regardless of whether the coin was heads or tails.”
I’m pretty sure it only discards an energy on a heads, but the way it’s written is ambiguous

The discard only happens if it’s heads. The Japanese card has both the damage & discard in the same sentence, making it clearer that both only happen on a heads. Compendium EX clarifies it for the English card:
Q. For Gyarados’ “Dragon Crush” attack, do you get to discard the Defending Pokémon’s energy cards regardless of the outcome of the coin flip? Or do you only discard energy if the coin flip is heads?
A. The energy is only discarded if the coin flip is heads. (Nov 20, 2003 PUI Rules Team)
