yes, I get the idea: thick fat is not shut down by effects that nullify resistances, and is instead shut down by effects that nullify abilities. While this is interesting-at an incredibly pedantic level- I’m inclined to think that this was created to reflect the actual gen 3 ability. I wonder how long it would have taken the average power to figure out the reason behind the resistances if they were actually printed as resistances ,rather than the products of an ability.

No, it’s not… in the games, Thick Fat means the Pokémon takes less damage from Ice and Fire Type moves and since Ice is Water in the TCG, it gets resistance to Water and Fire.
